Italian zucchini salad with pumpkin

Italian zucchini salad with pumpkin

Requirements:

* 800 grams zucchini
* 1 small red onion, chopped
* 200 grams pumpkin, diced
* 2 tablespoons tarragon vinegar
* 1 tablespoon pompoensap
* 1 / 2 teaspoon salt
* 1 pinch sugar
* Freshly ground pepper, to taste
* 2 cloves garlic, crushed
* 2 tablespoons olive oil
* 1 tablespoon fresh chives, cut
* 100 g feta, crumbled


Preparation:

* The old crane courgettes under deck rinse, dry and not too thin unpeeled in slicing.
* In a large pan with the salt water to the boil.
* The zucchini slices in a sieve into the boiling water 3 minutes laying (blanching).
* The screen from the pan, drain the zucchini and allow to cool.
* The pumpkin cubes cook 10 minutes.
* Pour off cooking liquid and absorb (save 1 tbsp).
* The pompoensap with tarragon vinegar, sugar, pepper, knofloor, onion and oil in a spicy sauce stir.
* The mix zucchini slices with pumpkin pieces, and create the salad dressing through the salad before serving sprinkle with chives and feta.
